Happy Easter. It is the most joyful and religious day in the Christian calendar. On this holy day, I have to think of my Aunt Eleanor. She was the most devout Catholic I have ever known, and I'm certain God recognized this and she is with him now. I miss her. In honor of Aunt Eleanor, I am giving you the gift of her quiche recipe. I have baked this dish many times; it is delicious and predictable. I usually use deli ham but leftover ham from Easter dinner can also be used, you can chop it and guess the appropriate amount. Aunt Eleanor's Quiche

1 pie shell

6 slices bacon, crumbled

1 onion, chopped

4 eggs

1 1/2 cup light cream

1/2 tsp basil

1/4 tsp dry mustard

1/2 tsp salt

1/2 lb. boiled ham

1/4 lb. Swiss cheese

Cook bacon, crumble it, sauté onion, (with oil from the bacon); put in unbaked pie shell. Add chopped ham and cheese. Mix egg, cream, and dry spices in a mixing bowl. Pour egg mixture into pie shell over the ham, cheese, bacon, onion. Bake at 425 degrees for 15 minutes, then lower temperature to 350 degrees. Bake for another 30 minutes.

Easy! I let the quiche cool for 5 minutes before serving, and pair it with a tossed salad and fresh fruit.
