Dental Tales of Love, Adventure, and Fun

Have a wonderful Thanksgiving! I am so thankful for the friends who read the newsletter, and I hope you enjoy what I have to share. I can remember a time when I stressed over Thanksgiving company, since it was always at my house. It became easier for me the year after my husband made fun of me for cooking the turkey upside down. Exasperated, I told him he should do the turkey. And the next year, he did. It became a tradition and is the only thing he cooks all year. And I will never look back, no turkey for me, and the side dishes are easy.

I miss a dining room that used to be filled to capacity, and this year there will be only five of us. Relatives have moved away, and passed away, and a holiday guest I think about often is my Aunt Eleanor. My aunt was a memorable lady; she never married or had children of her own, but she was everyone's aunt. I have a special place in my heart for her, and I think of her every holiday, and every time I make her cheesecake recipe. It is easy to make, with two secret ingredients. You will need a springboard pan. I hope you give it a try!

Aunt Eleanor's Cheesecake

Ingredients:

1 1/2 cups pound cake

three 8oz packages of cream cheese, softened

1 cup sugar

2 1/2 tsp vanilla

1 Tablespoon apricot brandy

12 oz white chocolate chips

16 oz sour cream

Lightly spray your springboard pan. Press the pond cake onto the base of the pan, this will be your crust. Beat cream cheese, sugar, vanilla and brandy for 5 minutes. (I use my Kitchen Aid, so I don't have to hold the mixer). I melt the chocolate chips SLOWLY in the microwave (usually at half power for ten seconds or less, mixing in between until softened). Add the softened chocolate chips to the above mixture and beat for 5 minutes. Then add sour cream and hand mix until blended. Pour mixture into the springboard pan. Bake at 350 degrees for 30 minutes. Cool overnight in the refrigerator. Add topping and whipped cream as desired, I like to use the cherry topping and decorate with a dairy whipped topping.
